Restaurant Sebastian is in Spicers Retreat Tower Lodge in Pokolbin - the heart of the famous wine growing region of the Hunter Valley. The closeness to the ocean and surrounded by rich agricultural land enables Restaurant Sebastian to use the best produce for the menu which features Basque cuisine, from the food rich destination of Spain, west of the Pyrenees and close to France.  Think roasted peppers or zuchinni flowers, slow cooked meats and intriguing desserts.  Wines are from the Hunter Valley plus some iconic Spanish varietals.
