Taking inspiration from the 1920s prohibition era, The Noble Experiment in Collingwood brings an air of theatre to every drink and plate of food served. With the best of both old and new worlds, this is where fine food and experimental cocktails meet. A contemporary space that is divided into private and open spaces with pop-up basement bars, an absinthe fountain and three tiers of bars to explore.
