On Sussex Street at the Hilton’s boutique West Hotel Sydney is Solander Dining and Bar.  The refined menu includes sustainable meat and seafood options, alongside ingredients like acacia seeds, banksia nectar, bush tomato, paperbark, Illawarra plums and macadamia and the drinks list features botanical-inspired cocktails., Guests can perch at the emerald green terrazzo marble bar or enjoy a sit down meal in the open-air jungle-style atrium. The restaurant and bar can create both intimate spaces or can cater for groups of up to 140 people.
