Set inside a converted terrace space in Redfern, Oratnek belongs to Kentaro Takayama, ex-head chef at the Darlinghurst arm of Bills. The name is an anagram of the chef-owner's own and the menu is a similarly playful take on the intersection between Japanese food and Modern Australian cafe favourites. Case in point: lunchtime snacks may include white bread sandwiches stuffed with pork katsu, American-style mustard, tonkatsu sauce and shredded lettuce.
