On the ground floor of The Exchange building in Darling Square, Pasta Wafu delivers classic Italian pasta dishes with a unique, Japanese spin. From the team behind Ume Burger (chef Kerby Craig) and Banksii (Hamish Ingham and Rebecca Lines), Wafu translates to ‘Japanese-style Western dishes’. Chef Craig makes handmade egg pasta daily and creates dishes that while Italian in elements have a distinctly Japanese flair. As a starting point, we highly recommend the miso bolognese fettuccine.
