From Ex-Momofuku Seiobo Chef Clayton Wells, Automata (pronounced "or-tom-eter") has opened on the ground floor of Chippendale's hottest new luxury hotel complex, Frasers Broadway. The restaurant is constructed on the site of the old Carlton United Brewery Administration Building and the Clare Hotel. The dining room is inspired by machinery and the five-course menu is to be constantly evolving. Wells takes his inspiration from rich flavour combinations found both in Australia and Europe, pushing the envelope through creativity and finesse on a plate.
